Olla de la Plana Recipe (Castellón)
The recipe that we bring you today is typical of La Plana region, in Castellón province, although you can find Olla de la Plana throughout Comunitat Valenciana. It is a traditional dish, which will take you back to your childhood, to your grandmother's kitchen, in short to gastronomy where simplicity and quality products prevail.
The cuisine of the Comunitat Valenciana is characterised, among other things, by having a wide range of spoon dishes and Olla de la Plana is a perfect proposal for winter. So you know: take note of this recipe to prepare a delicious stew.
We have compiled all the steps to follow to cook a delicious Olla de la Plana. Ready? Here we go!
Ingredients (for about six people):
300 grams of white beans
2 small carrots
1 small cabbage
1 large potato
150 grams of green beans
5 chard leaves
Salt, pepper, and olive oil
1- Soak the white beans in water. They should be soaking for a whole day. After, drain them and put them in a pot with 1 litre and a half of water over a medium fire.
2- When it starts to boil, add a splash of cold water to cut the boil. Repeat this step four times.
3- In the meanwhile, prepare the stir-fry in a separate pan. Take a good splash of olive oil and add the chopped onion.
4- Once the onion is golden, add the sweet paprika. Mix it with care for a few seconds, so it does not burn and add it to the beans.
5- Cut the other ingredients into small cubes and add them to the pot with the saffron threads, salt, and pepper. Let it simmer until the vegetables are ready (1.5 - 2 hours in a regular pot or 35 - 40 minutes in a pressure cooker).
If you want the dish to be stronger you can add some meat to the vegetables, for example, pieces of beef or fatty meats such as jowl, pig's trotters or blood sausage are ideal.
If you want to keep the original vegetarian version but want to add more ingredients, a good choice is to include pumpkin, tomatoes, and garlic. They will add a deliciously sweet touch.
