Paella de Marisco

Seafood is one of the great gifts offered by the Valencian coastline to lovers of fine food. And clearly, if we're talking about gastronomy in the Region of Valencia, seafood could not be left out of its star dish: paella. The result is a sublime combination of Mediterranean flavours. A classic through and through





400 gr fresh scampi; 200 gr prawns; 200 gr shrimp; 150 gr sea crabs; 250 gr squid; 1 large onion; 4 garlic cloves; 1 ripe tomato, grated; 500 gr rice; 10 tablespoons olive oil; salt, saffron and water.


Heat the oil in a paella pan. When hot, add all the seafood, fry well and remove. Using the same pan, add the chopped squid, the onion and garlic. 5 minutes later add the grated tomato. Stir lightly and add the rice, saffron and water. After bringing to a boil, add the seafood again and salt to taste.
