Borreta alicantina, Borreta from Alicante, is a “spoon food” dish from the Region of Valencia that is perfect for a wintery day. This easy-to-make vegetable stew from the province of Alicante is full of flavour and tradition. If you find yourself in Agres or Alcoy for example, then you must try this wholesome dish; it’ll warm you up and make you feel right at home with the locals.

To make borreta you need spinach, traditional dried peppers - a key ingredient when making pericana too - garlic, potato, olive oil and cod. For the finishing touch you’ll need an egg to poach on top. Like many dishes, you can chop and change the ingredients. You’ll often come across versions that use more commonly found leafy greens depending on the area of the region. Many of these green vegetables grow wild in the Valencian countryside, so look out for some purslane or rocket to add to your borreta.
