The Fiestas de San Ambrosio, San Ambrosio Festival, in Aín, Castellón, transforms this picturesque village in the Sierra de Espadán every 7 December into a lively gathering centred on food and tradition.

What is the San Ambrosio Festival in Aín all about?

At its heart, the celebration is wonderfully communal. Neighbours come together to share traditional dishes and keep the midwinter fire ritual alive. It’s a festival that combines village camaraderie with the glow and warmth of bonfires, turning streets and squares into an open-air dining room where the true flavour of Castellón’s customs can be savoured.

The festivities begin on 6 December with the preparation of large calderas—hearty rice dishes cooked with beans and meat—followed by an evening meal, music and dancing, and the lighting of the bonfire at midnight. On the 7th, the focus shifts to the plaza de la Iglesia, where tables are set out beside the fire and everyone gathers for a popular feast of meat chops grilled over the embers.
